Sparkling Coconut Lime and Pear Pops
Coconut, lime, pears....interesting combination, right? Jordan joyfully opened the freezer door last night to ask if he could have a popsicle, and when he asked what it was and I told him...well, let's just say he was pretty skeptical.
But oh man, when he took that first bite - he was hooked! Reaghan, of course, the little precious cupcake that she is, was clamoring for a bite (or two or three) and she LOVED these as well. Sometimes as a mama, I don't always get it right in the food department, but when my people are happy and their bellies are full, it feels so good!
Did you know that limes are actually in season in the fall? And so are pears! I'm seeing them pop up and just had to give this combination a try. They aren't very fall-ish, and have a little sparkle from the carbonated water, so I'm deeming them perfect for the end-of-summer, beginning of fall hopes and dreams time of year, aka September ;)
- 2 pears
- 1 lime
- 2 tablespoons honey
- 1 (12 ounce) coconut sparkling water
Chop up two pears and add to blender. Zest a lime into the blender, then cut in half and squeeze juices into the blender. Add honey and just enough sparkling water to get things blending. Blend until smooth, then add the remaining water and blend just enough to incorporate (you don't want to create too many bubbles!) Pour liquid into popsicle molds and freeze.
