Maple Cinnamon Apple Overnight Oats

Inspired by this post from a few years ago, I wanted to make a cold overnight oats version for you mama's! My kids loved this oatmeal so much (duh, who doesn't love maple syrup?) but having oatmeal ready to go in the fridge all week is the way to go in my book. 

I went ahead and took the maple syrup down a notch because I’m not a fan of starting the day off with that much sugar, but these are still sweet and yummy none-the-less. These are a perfect fall breakfast, but of course can be enjoyed year round. I think it would be super fun to go apple picking (if it’s available in your area) and then make a batch of these oats together!

Maple Cinnamon Apple Overnight Oats | Overnight Oats Club

Ingredients:

  • 2 cups rolled oats

  • 2 scoops Vital Proteins Collagen Peptides (optional)

  • 1/4 cup chia seeds

  • 1 tablespoon cinnamon or apple pie spice

  • pinch of salt

  • 1 apple, diced small (I like fuji for this)

  • 2 cups unsweetened vanilla almond milk

  • 1/4 cup maple syrup

Instructions:

  1. Place all the dry ingredients into a bowl and stir well until everything is combined.

  2. Place all the wet ingredients (apple, almond milk, maple syrup) and stir until everything is incorporated.

  3. Carefully scoop into mason jars and let set overnight in the refrigerator.

  4. Enjoy cold in the morning! These will keep in the refrigerator for 1 week.
