Valentine's Day Snack Board

If you know me, you know that our family LOVES snack boards for dinner once a week. Specifically, we do our snack boards on Sunday nights. It’s the perfect no-cook easy meal on a day of rest like Sunday where I personally just want a break from cooking and all the housework that consumes the rest of the week.

Valentine’s has always been one of my favorite holidays. There is something so sweet about making the people you love feel special and seen. It’s such a great opportunity to extend hospitality to those who might be more lonely in their current season and to reach out to neighbors with a fun treat.

This year Valentine’s landed on a Sunday so guess what we made? A Valentine’s themed snack board! I think this would be so fun to continue on into future years though, no matter what day of the week Valentine’s lands on! It’s just a nice way to make the day cute and special, especially for little ones!

My snack board included:

  • Beet waffles

  • I used the liquid from steaming the beets to color marshmallows pink, then cut them into hearts with a cookie cutter. I love the marshmallow recipe in the cookbook Celebrations

  • heart peanut butter sandwiches

  • homemade chocolate and peanut butter hearts (made in a silicone candy mold)

  • buffalo chicken dip, chips, popcorn

  • Yum Earth heart fruit snacks

  • strawberries

  • salami

  • GF almond seed crackers

Other ideas for what to include:

  • freeze dried strawberries

  • red bell peppers

  • baby tomatoes

  • raspberries

  • beet chips

  • red or purple grapes

  • watermelon radish

  • cheese cut into hearts

  • apple slices

  • grapefruit or blood orange

  • prosciutto
