Peanut Butter & "Jelly" Overnight Oats

Anybody else's kid completely obsessed with peanut butter? I think it's their favorite food, haha! This was another reader request on Instagram and I LOVED the idea of making this classic flavor combination in oats form. I don’t eat peanut butter anymore and I even tried it and thought it tasted amazing. There’s just the right amount of peanut butter to make this decadent along with the “jelly.” I happen to rarely keep jelly around, so we opted for a sugar free, yet still delicious version of smashed strawberries, but feel free to use any berry you have or enjoy the most here OR go ahead and plop some jelly on top!

You could layer the PB with jelly or just add it to the top. I also think these would taste great with almond or any other kind of nut butter if you can’t or don’t eat peanuts. Enjoy!

Peanut Butter & Jelly Overnight Oats | Overnight Oats Club

Ingredients: 

  • 2 cups rolled oats

  • 2 scoops Vital Proteins Collagen Peptides (optional)

  • 1/4 cup ground flax seed

  • 1 teaspoon cinnamon

  • 3/4 cup creamy peanut butter

  • 1/4 cup honey

  • 2 cups unsweetened vanilla almond milk

  • 1 cup frozen or fresh strawberries

Instructions: 

  1. Combine all the dry ingredients in a large mixing bowl and stir well.

  2. Add in the wet ingredients (peanut butter, honey, milk).

  3. Mix until the peanut butter is well incorporated with the other ingredients.

  4. If using fresh strawberries, remove the stems and place in a seperate bowl, smashing with a potato smasher to create a "jelly."

  5. Carefully pour the oats into mason jars and keep in the refrigerator overnight. You can layer the oats with the jelly or simply scoop some jelly on the top of the oats, whatever you like!

  6. These keep for 1 week in the refrigerator!
