Croissant Breakfast Sandwich

Turkey bacon, sharp cheddar cheese and a fried egg are stacked in a croissant to make the BEST breakfast sandwich for this new year! 

Good morning, everyone! I'm Erin, the blogger/photographer/editor/ringmaster over at The Speckled Palate. I'm thrilled to be bringing y'all a recipe today as Natasha and her family settle in with their baby boy!

Last March, I gave birth to my husband's and my first child, a baby girl. Understandably, our lives changed immediately, and this past year has been an incredible one. 

And when Natasha asked me to contribute a post for her maternity leave, I knew I wanted to make something that would be easy for you, her readers, to make, but also create something that would be simple for her to make for herself should she want a quick, no-fuss homemade meal.

This Croissant Breakfast Sandwich is what I came up with, and I'm not ashamed to admit that I've made it several times since its inception. 

First and foremost: It's so simple to make. It takes 15 minutes tops, and the parts that take the longest are cooking the turkey bacon and toasting the croissant. And I've found that you can bake the bacon on two layers of parchment paper instead of frying it to get the crisp effect with little babysitting or pan burning. 

Secondly: Breakfast is near and dear to my heart. It's always been my favorite meal -- who doesn't love breakfast for dinner? -- and after our baby arrived, my husband and I ate our way through a stash of breakfast tacos that my sister and I made and froze.

While this Croissant Breakfast Sandwich isn't a freezer sandwich, it comes together easy and fast, and being a new mom myself, I know this is something Natasha can fix for herself and her family should they need a quick, delicious breakfast.

The turkey bacon is so crisp. The cheddar cheese gets soft and melty. The egg adds the perfect gooeyness. And the croissant is perfectly crunchy. What's not to love?

Here's how you can make one of these for yourself today:

Makes 1 sandwich          Takes 15 minutes

Ingredients

  • 1 croissant, toasted
  • 1 egg, over easy (or cooked to your specifications!)
  • 2 slices turkey bacon, crispy
  • 2 slices extra sharp white cheddar cheese

Instructions

  1. Toast the croissant and slice in half.
  2. Layer the cheese, turkey and egg in between the slices.
  3. Cover, and enjoy immediately.
