Pumpkin Spice Overnight Oats
This recipe was requested a few times on Instagram when I put a call out for flavor ideas for overnight oats. Today marks post 1 of 5 new overnight oats recipes that will hopefully inspire you to get in the kitchen with your littles, prep breakfast (these make great snacks too!) ahead and enjoy some easier mornings with your family.
Watching the kids try all of these overnight oats flavors has been hilarious. Everett took one bight of this and didn't touch it again (guess he's not a pumpkin fan?) but Reaghan cannot get enough of it!! She loveeessss it and asks for more!
This is the perfect fall start to your morning, especially for those of you PSL lovers ;)

2 cups rolled oats
1 teaspoon cinnamon
2 teaspoons pumpkin pie spice
2 scoops Vital Proteins Collagen Peptides (optional)
1/4 cup chia seeds
1/4 cup honey
1/2 cup pumpkin puree
1 cup unsweetened vanilla almond milk
1 cup plain whole milk yogurt (we love Stoneyfield Farms)
Combine all the dry ingredients in a large mixing bowl and stir well.
Pour in all the wet ingredients (milk, yogurt, pumpkin and honey) and stir well.
Carefully pour into mason jars and let set in the refrigerator overnight.
Enjoy cold in the morning! These will keep in the refrigerator for 1 week.
