Blueberry and Pomegranate Oatmeal

Blueberry and Pomegranate Oatmeal

I’m here to share a delicious recipe with you all, and I’ve got the best one for you! This Blueberry and Pomegranate Oatmeal is one of my absolute favorite breakfasts. Drizzled with maple syrup and topped with almonds and chia seeds, this breakfast is an extremely nutritional way to start your day.

I have to admit that at the end of 2015 my diet was a slippery slope. I fell into the holiday curse of cookies, chocolate, and carbs. But my body is much happier in 2016 since I’ve been feeding it nutritional foods, and this oatmeal is what I start my day off with about two times per week.

On the other days I whip up a smoothie or some scrambled eggs, but this oatmeal gives me a break from the monotonous breakfast routine. I now found out that breakfast can be exciting, which was foreign to me when I used to just eat toast with apple butter every day (though I still love a good apple butter day!).

The mix of the scrumptious fruit, sweet maple flavor, and crunch of the almonds and chia seeds is such an exceptional combination. If you don’t believe me, try it for yourself :)

Ingredients

  • One serving oatmeal

  • ¼ cup pomegranate seeds

  • ¼ cup blueberries

  • 3 tablespoons sliced almonds

  • ½ teaspoon chia seeds

  • Drizzle of maple syrup

Instructions

  1. Make your oatmeal according to the directions on your package
  2. Add your pomegranate seeds and blueberries to the oatmeal
  3. Top with sliced almonds
  4. Sprinkles with chia seeds
  5. Drizzle with maple syrup
  6. Dig in!
