Creamy Coconut Basil Rice

We don't do tons of sides in our family, but when we do, we try to keep it super simple. Frozen veggies thawed and steamed, a big bag of quinoa or rice from Costco to cook up, or fresh fruit. Simple, inexpensive, and most importantly, no fuss.

This rice makes an awesome side to any dish. It's creamy and decadent but so simple to make. I feel fancy eating it, but honestly, there are only 6 ingredients (including salt and pepper, which I know you already have in your pantry!)

Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 13.5 ounce can full fat coconut milk (where to buy)
  • 7-8 basil leaves
  • 1 teaspoon cumin
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

Cook rice according to package instructions - this usually takes about an hour for brown rice. Shake your can of coconut milk to mix up the fat and the water, and pour half the can into your cooked rice. Chop up basil leaves and add to the rice, along with the cumin, salt and pepper. Stir everything together, taste, and adjust any seasonings as needed.

*Note: Save remaining coconut milk by freezing for future recipes or adding to a smoothie later in the week!
